Growing up in 1970s Kansas, the exact middle of the United States, I always thought of Timbuktu as nothing more than an expression of distance, great distance. “It might as well be in Timbuktu!” Thirty years later, I learned different. Where do you think Timbuktu is?
I am determined to learn how to cook a whole fish while at home in Spain. My first attempt at dorado fell apart, a travail, but I enjoyed the experience to the fish market and mastered the Spanish recipe by the end of my travels.
