One of our most memorable Spanish experiences was the Fallas festival in Valencia, Spain. I had heard about this city-wide street festival with its towering sculptures that were burned on the last night, but I was in no way prepared for the pageantry and processions, the afternoon mascleta and brilliant La Nit del Foc fireworks at 2:00am.

You can image our excitement then when we found ourselves in London during the annual Trooping the Colour. This impressive parade and London event is held on Queen Elizabeth’s official birthday. I am determined to learn how to cook a whole fish while at home in Spain. My first attempt at dorado fell apart, a travail, but I enjoyed the experience to the fish market and mastered the Spanish recipe by the end of my travels.
